Kunu Aya aka Tigernut Milk
3 cups Tigernuts
1 cup dry, de-seeded Dates
Half a Coconut
1 teaspoon Vanilla Essence
A teaspoon of cinnamon powder (My personal fave)
•Wash Tigernuts, be sure to scrub hard to get rid of excess dirt.
•With each wash, be sure to change the water. Repeat 3 to 4 times.
•Thoroughly wash the dates.
•crack the nut (coconut) and remove the fleshy part.
•Grind the tiger nuts in an industrial style blender (nothing major, a blender strong enough to crush ice), de-seeded dates and coconut with 1 liter of water.
•Sieve thoroughly to remove rough ‘bits’ from the milk.
•add the vanilla essence
•shave the cinnamon sticks in for an extra kick.
•strain through a fine sieve for extra smoothness.
•Put in the refrigerator to chill
•serve in a copper mug or a red wine glass and garnish with a stick of cinnamon.
This would make for an awesome recipe and a great alternative to dairy milk.
I’m using this as a replacement for the usual Christmas egg nog, probably mix in a little rum.
