17 Apr Chicken in ginger and spring onion sauce
1 small onion
2 Diced skinless chicken breasts
2 cloves of garlic
3 Spring onions
2 diced carrots
2 diced green peppers
4 scotch bonnet peppers
2 tbsp soy sauce
A pinch of black pepper
2 tbsp corn flour
1 Seasoning cube
1 cup water
1 tbsp olive oil
Salt to taste
Put ginger, garlic, salt and black pepper in a pestle and mortar, grind to a paste.
Cut the chicken into cubes and marinate with the ground up paste.
Chop the spring onions and Dice the onions.
Heat a wok over a high heat with the olive oil. Brown some garlic, onions and scotch bonnet pepper, then add the chicken. Pour in the chicken and stir until cooked all through
Mix the corn flour into some room temperature water.
Pour into the pan and stir
add in rest of veg and stirfry for 4-5 minutes
add soy sauce, seasoning cube and water. Reduce heat and simmer for another 15 minutes
Serve with Basmati rice and garnish with chopped spring onions.
